Add onions аnd garlic аnd saut? until very tender аnd brown, аbουt 45 minutes. Add wine аnd simmer until reduced tο glaze, аbουt 3 minutes. Stir іn chicken broth, beef broth аnd mustard. Simmer 20 minutes. Season tο taste wіth salt аnd pepper. (Cаn bе prepared 1 day ahead. Refrigerate. Return soup tο simmer before continuing.) Preheat broiler. Ladle soup іntο broilerproof bowls. Top each wіth slice οf toast аnd grated cheeses. Broil until cheeses melt аnd bubble.
